Ingredients for Spiritual Cod for Holy Week
COD
- 700g of cod
- 1 liter of liquid milk
- Thyme, bay leaf, rosemary to taste
- 1 head of garlic, just cut in half
- Extra virgin olive oil
TOASTED BREAD
- 1 baguette bread
- 2 garlic cloves
BRANDITY
- 250 ml of cod milk
- 120g of brains
- 80 ml of oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 minced girl's finger pepper
- 1 grated carrot
- cumin salt and pepper to taste
BECHAMEL SAUCE
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- 300ml cod milk
- 1 tablespoon Dijon mustard
- Nutmeg
- Salt and pepper to taste
ASSEMBLY
- 300g grated parmesan cheese
- olive oil to serve
How to Make Spiritual Cod for Holy Week
COD
In a pan, add the milk with the herbs and garlic, bring to a boil. After boiling, place the cod and cover, with the fire off, let it soak for 15 minutes.

After 15 minutes, remove the cod with a slotted spoon, let it cool and shred. Reserve the milk.
TOASTED BREAD
Cut the baguette bread into slices and drizzle with olive oil. Bake in a medium oven. Remove from oven, cut garlic in half and rub on sliced buns. Reserve.
BRANDITY
Remove the core of the buns and shred them with your hands, throw them in a pan and add the hot milk over the bread. Mix well until it forms a puree. Reserve.
COD
In a pan put the onion, pepper, oil and sauté. Then add the garlic, carrots and cod and continue to sauté.

Sauté until dry, takes about 5-10 minutes on high heat. turn off the heat and add the bread mashed you have reserved. If you need salt, add it. Mix well and set aside.
BECHAMEL SAUCE
In a pan, melt the butter and wheat flour and let it cook for 2 minutes. Add the cod milk, the one you reserved, cook stirring constantly.

Add mustard, nutmeg, salt and pepper to taste. Keep cooking until it thickens. Turn off the fire.
ASSEMBLY
In a dish greased with olive oil, make a layer with the cod stew with bread, cover with the béchamel sauce, sprinkle the parmesan.

Bake in a preheated oven at 180°C for 20 minutes. Serve while still warm with the toast and drizzle with olive oil.
