  • 8 small eggplants 
  • 6 ripe tomatoes, blanched and strained 
  • Syrian Pepper 
  • pine nuts 
  • shawl 

Filling: 

  • 300 g of fat (no nerves) minced meat 
  • 2 medium chopped onions 
  • 1 tablespoon of washed pine nuts 
  • lemon juice 
  • sweet pepper 
  • cinnamon 
  • eggplant pulp 
  • 2 tablespoons butter 
  • shawl 

Preparation

Wash the eggplants and soak them in salted water. Brown the whole eggplants in a mixture of butter and olive oil. Next, slash along the eggplants and remove some of the pulp. Make the stuffing by sautéing the onion and meat in butter. Add the pine nuts and let them brown. 

Add the lemon and season with salt, pepper and cinnamon, when removing from the heat. Finally, add the pulp of the eggplants, arrange them in a Pyrex dish and drizzle with the tomato sauce. Put it in the oven. Before serving, brown the pine nuts and spread them over the eggplants. Serve with Syrian Rice.
