Ingredients Cold Bomb

  •  1 liter of vanilla ice cream
  •  1 panettone of 1 kg
  •  125 ml Vin Santo (Italian dessert wine) or sherry
  •  1/2 jar of raspberry jam
  •  25g shelled pistachios
  •  75g of cherries
  •  40g of candied fruit in small pieces
  •  2 tangerines (1 peeled and sliced)
  •  200g melted semi-dark chocolate

Way of doing Cold Bomb

Take the ice cream out of the freezer to let it soften as you prepare the recipe. 

Line a large bowl with three layers of plastic wrap, leaving plenty of excess around the edges. Cut four or five slices of panettone. Line the inside of the bowl with the panettone slices, do not leave any leftovers out of the bowl and remove the excess from the bottom of the bowl. With the back of a spoon, spread a thick layer of jam all over the panettone slices. 

Add half the ice cream, add the pistachio, cherries and candied fruit, press a little with the back of a spoon and finish with the tangerine slices. Put the rest of the ice cream. Cut slices of panettone and make a 'lid' for the bowl. 

Pour some Vin Santo or sherry over the side slices and the 'lid' of the bowl, so the panettone absorbs. Pull back the sides of plastic wrap to cover the chilled bomb. With the help of a plate, press the pump.

Place in the freezer for at least four hours.

Melt the chocolate in a bain-marie over low heat and add the tangerine zest. When serving, unmold the bomb and cover with the melted chocolate.
