Ingredients Broth sururu

  • 1 kg of mussels, preferably large
  • 1 glass of coconut milk (200 ml)
  • 1 bunch of coriander finely chopped
  • 1 tablespoon of extra virgin olive oil
  • 1 onion cut into small pieces
  • 1 tomato cut into small pieces
  • 1/2 bell pepper cut into small pieces
  • 1 spoon of palm oil
  • Salt to taste
  • 5 potatoes

Preparation Broth sururu

To start, cook the potatoes in a pressure cooker with a little salt. Put them cooked in the blender soon after and hit with a little water.

Now, take a large pan and place the chopped tomato together with a chopped onion, cilantro, ½ chopped pepper and also the sururu. Bring to a boil over low heat and stir well so it doesn't stick to the bottom of the pan.

After 3 minutes add the coconut milk and stir for a little more than 1 minute, adding the mashed potato that was previously beaten in the blender.

Now, put 1 tablespoon of palm oil, stir a little and add the olive oil. Add salt to taste, too, so it doesn't get too salty.

Serve in glass or resistant plastic cups, leaving lemon and pepper at the disposal of whoever is going to taste.
