  • 2 cups (heaping) lentils

  • 1 cup (tea) of olive oil
  • 2 cups of rice (tea)
  • 7 cups of tea 

How to make Mudárdara: 

Wash the lentils and put them in the water to cook. Fry the onions in the oil, over low heat, and stir until they are almost golden. Next, pour all the oil and half of the onion into the lentil pan. Season with salt and let everything cook. Meanwhile, pick and wash the rice. Soak it in very hot water. Strain the lentil. When cooked, add the rice and 5 cups of strained broth (2 1/2 cups of boiling water for each cup of rice). Mix the rice with the lentil and taste the broth. Let it cook over low heat, without stirring. Before all the water dries up, the rice must be cooked (loose, fluffy and more moist than Syrian rice). Serve warm, spreading half of the fried onion over the lentil.
