  • 3 or 4 zucchinis, grated and cut into squares

  • 2 or 3 eggs
  • Syrian Pepper 

How to Make the Mufarque: 

Fry the onion in the butter. Add the zucchini and cook over low heat, with the pan covered. From time to time, stir the mixture. When it's well cooked, crack the eggs on top and season with Syrian pepper. Cover the pan for a few minutes and stir again so that the eggs are mixed with the zucchini. Let the cooking complete over low heat. The same recipe can be made with eggplants.
