Ingredients for Leg of Lamb with Rice and Meat

  • 1 leg of mutton 
  • 2 kg of ground rump 
  • 3 cups of rice (tea) 
  • 3 cinnamon sticks 
  • 1 teaspoon cinnamon powder 
  • golden almonds and pine nuts in melted butter 
  • meat broth 
  • garlic and onion pounded with salt and Syrian pepper 
  • 1 packet of green scent 
  • 1 lemon juice


The day before, clean the leg of lamb, remove the membranes and excess fat. Pierce and season with crushed garlic and onion. Drizzle with lemon juice and place in the fridge. The next day, fry the leg of lamb over a low heat, turning it constantly. Remove the fat that forms in the frying. Add the green smell, the cinnamon sticks and a few spoons of cold water, little by little, until it cooks well. Then put it in the oven to brown. Separately, sauté the rice in the lamb fat, add the ground beef, parsley, ground cinnamon, salt and Syrian pepper. Gradually add the beef broth and, finally, 6 cups (tea) of boiling water. Cook over low heat. Before serving, stir the rice with a fork to loosen the grains. Remove the lamb from the oven, cut it into slices, keeping the bone. Arrange everything on a large platter, placing the rice covered with almonds and the pine nuts
