  • 1/2 girl's finger pepper
  • 1/2 package moyashi bean sprouts
  • 1/4 cup concentrated fish sauce
  • 1 tablespoon of corn oil
  • 1 packet of rice noodles
  • 1 bunch of fresh coriander
  • 1 bunch of mint
  • 1 lemon
  • 1 cinnamon stick
  • 1 onion
  • 1 small piece of ginger
  • 2 star anise
  • 3 chives stalks
  • 4 carnations
  • 5 chicken thighs

Preparation Quick chicken pho in the pressure cooker

Cut the onion in half;

Pour a drizzle of oil into the pressure cooker. Fry the onion and ginger;

Add the star anise, cloves and cinnamon stick. Stir for 2 minutes;

Add the chicken, fish sauce, a little fresh cilantro and 2 liters of water. Close the pan and, as soon as it gets pressure, let it cook for 30 minutes;

After 30 minutes, turn off the heat and let the pressure release by itself;

Meanwhile, cook the noodles in boiling water for 2 to 3 minutes;

Drain the noodles and wash with cold running water. Reserve;

Remove the chicken from the pan and remove the skin and bones. Cut into medium pieces;

Add the ingredients in a bowl in this order: noodles, chicken, moyashi sprouts, cilantro, mint, chopped chives, slices of finger pepper and the stock from the pan;

Squeeze a lemon to finish and serve.



  • 1 tablespoon of organic or white crystal sugar

Add the stock from the pan, the chicken, the bean sprouts, the red pepper, the cilantro, the basil and slices of the red onion;

Finish with chives.

  • 1 cup of chopped chives
  • 1 cup chopped coriander
  • 1 teaspoon peppercorns
  • 1 teaspoon of minced ginger

  • 2 lemons
  • 500 grams of breast or rump
  • 500 grams of cooked rice noodles
  • 500 grams of bean sprouts
  • 4 liters of meat broth

Preparation meat pho

Place the onion, ginger, cinnamon, pepper and beef stock in a pan. 

When it starts to boil, cover and let it cook on low heat for 1 hour;

Cook the rice noodles and set aside;

Cut the meat into thin slices and each lemon into 4 parts;

In a bowl, add the desired portion of: rice noodles, raw meat slices, seasoned beef broth, bean sprouts and ¼ of the lemon;

Sprinkle with basil, parsley and chives;

Serve it hot.

Beef pho with herbs


  • Water
  • 1 pepper, chopped
  • 1 cinnamon stick
  • 1 black cardamom
  • 1 Fuji apple
  • 1 chopped red onion
  • 2 garlic cloves
  • 2 carnations
  • 2 ½ onions
  • 5 star anise
  • 5 grams of coriander seeds
  • 5 grams of ground coriander
  • 5 grams of Chinese yellow sugar
  • 20 grams of ginger
  • 30 grams of Thai basil
  • 30 grams of mint
  • 30 grams of bean sprouts
  • 30 grams of fresh coriander

Place the bones in a pan and cover with water. As soon as it boils, remove, wash and reserve;

In a skillet, toast 3 star anise, cardamom, cinnamon, cloves and coriander seeds. When it starts to release the oils, turn it off;

Place 2 unpeeled onions on the stove flame to toast. Remove the skin and reserve the onion;

Add the bones to a large pot and cover 3,5 liters of water;

Add in the pan: star anise, cardamom, cinnamon, cloves, coriander seeds, ginger, onion, Chinese sugar and apple;

Let it boil on low heat for 6 hours and, during this time, remove the impurities that are on top of the broth;

When the broth has cooled, strain 3 times with a gas;

Clean the meat, remove the fat and season with ground coriander;

Pour 1 liter of water into the pan. Add fish sauce, ½ onion and star anise. 

When it starts to boil, turn off the heat, remove the meat and reserve the broth;

Cut the meat into very thin slices. Reserve;

Cook the rice noodles and cool with ice water;

Cut the red onion into thin slices;

Place the desired portion of noodles in the individual bowl;

Add the red onion, the meat and the hot broth;

Finish by increasing these ingredients according to your taste: bean sprouts, fresh coriander, fish sauce, chopped chives, Thai basil, mint and chili pepper.

Vegetarian mushroom pho


  • 1 star anise
  • 1 handful of pawpaw seaweed
  • 1 branch of celery,
  • 1 cup of coriander
  • 1 seedless chili pepper
  • 1 tablespoon tamari (or soy sauce)
  • 2 cinnamon sticks
  • 2 onions
  • 2 teaspoons of coriander seeds
  • 3 carnations
  • 3 carrots
  • 3 tablespoons of coconut oil
  • 5 cm of fresh ginger
  • 120 grams of rice noodles
  • 200 grams of brown mushrooms

Preparation Vegetarian mushroom pho

Place the cinnamon sticks, star anise, cloves and coriander seeds in a frying pan. Stir for 2 minutes over medium heat to brown;

Peel the carrot and onion and cut into medium pieces;

Peel the ginger and cut into slices

Pour the toasted spices into a pan. Also add the carrots, onions, celery, ginger and tamari. When it boils, cover the pan and let it cook on low heat for 30 minutes;

Strain the broth and reserve;

Cook the noodles in water according to the package instructions;

Drain the noodles, rinse with cold water and apply a little oil to prevent them from sticking;

Place the seaweed in a bowl of water to hydrate for 15 minutes. Drain and add to the broth;

Heat a pan with coconut oil and add the mushrooms. Saute for 5 minutes and set aside;

Assemble the bowl with the noodles, the mushrooms and the hot broth;

Finish with coriander and chili pepper.

  • beef bones

  • 700 grams of meat

Cook the bones in boiling water, drain and remove the marrow. This procedure is optional;

Put enough water in a pan and insert the bundle with the spices. Let it boil for 30 minutes and remove;

In the same pan, add the meat, half of the arugula, the mushrooms, the fish sauce, the squeezed lemon, the salt and the sugar. Let it boil for 3 hours;

Cook the rice noodles and drain with cold running water;

Assemble your pho in the bowl with the rice noodles, the other half of the raw arugula, the chives, pepper, sliced ​​onion, lemon and marrow.

Chicken Pho with beef broth

Return the sealed muscle to the pan in which it was sealed and add: the carrot mixture, onion and seasonings, 2 liters of water, fish stock, soy sauce, chili sauce, xylitol, slices of chicken and a pinch of salt;

Let it cook for 1 hour and remove the foam and impurities from the top;

Cook the rice noodles in boiling water, drain, place in a bowl of very cold water and drain again;

Assemble your bowl with rice noodles, bean sprouts, slices of raw onion, lemon juice and broth with meats and seasonings;

Finish the PHO with basil leaves, chopped chives and pepper.
