Ingredients zucchini risotto

  • 1 medium garlic clove
  • 1 medium chopped onion
  • 2 medium size zucchinis
  • 2 cups of good quality white rice
  • 1/2 cup dry white wine
  • 2 teaspoons of olive oil
  • 1 tablespoon of butter
  • 1 vegetable stock dissolved in a cup of boiling water
  • 2 tablespoons freshly grated Parmesan
  • 3 cups of boiling water
  • Salt and black pepper to taste
  • 2 tablespoons of parsley and chives

Preparation zucchini risotto

In the pan, place the olive oil, fry the garlic already minced together with the chopped onion, let it brown slightly.

Then add the zucchini cut into not too small cubes, let it cook without cooking and then add the washed and drained rice.

Add the vegetable stock and the rest of the boiling water, stirring constantly.

Add the salt, pepper and white wine, keep stirring and taste the rice to see if it is cooked.

The rice needs to be soft and al dente to be at the right point, if it has reached this stage it's time to add the butter, the grated cheese and finally the parsley and chives.

Serve immediately.
